Alpine Cheese Fondue
There are many versions, this is ours. It is meant as a moment to relax with a glass of crisp Alsace Riesling and to be surrounded by friends and family.

What You'll Need
- ¼ lb each of Swiss Gruyère, Swiss Hoch Ybrig, Chällerhocker and an aged French Comté
- 1 Cup of a good dry white wine
- 1 tbsp Cornstarch
- 1 crushed Garlic clove
- 1 tsp grated nutmeg (use whole nutmeg)
- 1 Tbsp of Champagne Vinegar (optional)
- 1/2 tsp of Dijon style mustard (optional)
- A ceramic fondue pot
- Accompaniments such as crusty bread, roasted vegetables, soft cooked baby potatoes, salumi, cured meats)
How to...
- Remove the rind of the cheese, cut into small pieces and put aside. Allow cheese to reach room temperature
- Coat the cheese in the cornstarch and nutmeg
- Rub the serving container (Fondue Pot) with the garlic clove
- Heat the fondue pot over low heat and bring the wine and vinegar (optional) to a gentle simmer
- Gradually whisk in the cheese, a little at a time. Ensure that the cheese has fully melted before adding more.
- If you so choose, at this time you could whisk in the mustard and/or herbs
- Once all the cheese has melted move away from the heat and place over a candle to be ready to serve.
- Cut up bread, vegetables and potatoes into bite size pieces and enjoy with glass (or two) of Alsace Riesling or a dry French Chablis
