SCALLOPS PAN-SEARED WITH BUTTER AND HERBS
Ingredients
1 LB Scallops
1/3 Cup of unsalted butter
1 Tbsp dried Thyme
1 Grapefruit cut into wedges (Removing skin or rind)
Pinch of Salt and Pepper
Steps
1) Powder scallops with salt and temper for 15-20 minutes
2) Heat a stainless-steel pan to medium-high heat
3) Melt half the butter until light golden brown
4) Gently place scallops in the pan and leave undisturbed until a golden crust is formed
5) Reduce heat to medium, flip the scallops and add remaining butter and thyme
6) Spoon butter mixture over the scallops until both sides are a light golden brown
7) Plate scallops and spoon pan juices over the scallops. Serve with grapefruit wedges
These are great on their own or over a bed of a citrus/herb pasta or rice
