BAKED LOBSTER TAILS BASTED WITH BUTTER AND SMOKED PAPRIKA
Ingredients
¼ Cup melted unsalted butter
2 Large Lobster tails
1 Tbsp smoked paprika
1 Tsp garlic powder
1 Tsp Salt
Fresh parsley minced
½ Lemon
Steps
1) Heat oven to 400 degrees F
2) Mix the paprika, butter and salt and set aside.
3) Using kitchen shears cut the top portion of the tail. Follow the middle of the tail going from the top through to wear the tail meats the bottom fins. Please ensure not to cut the flesh as you do this.
4) Using your thumbs, gently pry the shell open, then using your fingers, gently release the flesh from the shell. Extract the flesh through the slit you created and allow it to rest on top of its shell
5) Transfer the lobster tails to a steel pan and generously brush the flesh with the butter/paprika mixture
6) Place the pan in the oven, with the rack in the middle position
7) Remove once the flesh is at 140 degrees F (approx. 12-15 min)
8) Remove from the oven, plate and brush the flesh with a little more butter. Squeeze some lemon juice and top with parsley
