STEAK WITH A SOY REDUCTION
Ingredients
1 High quality Pan-Searing Steak (Hanger, NY Strip, Flatiron)
2 Tbsp Tamari Soy Sauce
1 Tbsp Sake
2 Tbsp Rice Vinegar
1 Tsp Worcestershire sauce
1 Tbsp sugar
2 Tbsp butter
2 Garlic cloves
1 Garlic clove crushed
1 Tsp pepper
1. Combine Soy Sauce, Vinegar, Sake and Sugar in a bowl and set aside
2. Temper meat to room temperature
3. Heat a cast iron pan to smoking hot
4. Add high smoke point oil and add steak to the pan
5. Let sit 2-3 minutes per side until an internal temperature of 100 degrees is reached and a beautiful outer crust is formed.
6. Add butter and garlic to the pan and baste the steak until an internal temperature of 110-115 degrees is reached
7. Remove from the pan and let the steak rest. Discard garlic
8. Reduce heat to med-high and pour sauce mixture into the pan and reduce by 50%
9. Stir in crushed garlic and dissolve for 1 minute.
10. Slice steak diagonally in thin strips
11. Serve over a bed of white rice and spoon sauce over the steak and rice
